This is a very easy weeknight dish.  You can defrost the shrimp in the sink in only a few minutes and have dinner on the table in less than 30.

Shrimp Linguine with Broccoli and White Wine Sauce
Prep time: 10 minutes | Cook time: 20 minutes | Serves 4

8 oz dry high fiber pasta
12 oz raw shrimp
1/4 C white wine (dryer is better)
1/2 C reduced sodium chicken broth
3 cloves of garlic, chopped
1 crown of broccoli, chopped
1/2 tbsp olive oil

Cook pasta according to package directions.
Heat oil in sauce pan over medium high heat and add garlic.  Cook for about a minute until fragrant.  Add remaining ingredients and cook over until shrimp is no longer pink.  Reduce heat and simmer for about 10 minutes.
Mix cooked pasta in with shrimp and broccoli sauce and serve.
Sprinkle a little fresh parmesan if you prefer.
